Kimchi



Seasoned fermented vegetable dish made by pickled vegetables, such as radishes, cabbages, cucumbers, and other spices, mixed with red pepper, green onions, garlic, ginger



People need to eat vegetables rich in vitamins and minerals, but it is difficult to store them because they are different from grain. Of course, you can dry and store vegetables, but when you dry them, they lose their original flavor and lose nutrients. So, I developed method to store vegetables by preserving them in salt or mixing them with soybean paste, vinegar, and spices to create new flavors and smells. Kimchi is our own food developed like this.
